How to make Chicken Biriyani?

South Asian cuisine is known for its flavorful and aromatic rice dish known as chicken biryani. The following is a recipe for homemade chicken biryani:

Ingredients:

For the chicken marinade:

- 470g boneless chicken, cut into bite-sized pieces

- 1 cup plain yogurt

- 1 tsp ginger paste

- 1 tsp garlic paste

- 1 tsp red chili powder

- 1 tsp cumin powder

- 1 tsp coriander powder

- 1 tsp garam masala

- 1/2 tsp turmeric powder

- Salt, to taste


For the rice:

- 2 cups basmati rice

- 4 cups water

- 2 bay leaves

- 2 green cardamom pods

- 2 cloves

- Salt, to taste


For the biryani:

- 1/4 cup vegetable oil

- 2 onions, sliced

- 1 tbsp ginger paste

- 1 tbsp garlic paste

- 2 tomatoes, chopped

- 2 green chilies, chopped

- 1 tsp cumin seeds

- 1 tsp coriander powder

- 1 tsp garam masala

- Salt, to taste

- Fresh coriander leaves, chopped, for garnish

- Fried onions, for garnish


Instructions:

1. Until the water is crystal clear, rinse the rice in cold water. Drain the rice after 28 minutes of soaking.

2. Combine the marinade ingredients for the chicken in a big bowl. Stir in the chicken pieces completely. 

3. Bring the water to a boil in a big pot. Add the salt, bay leaves, cardamom pods, and cloves. When the rice is halfway cooked, add the drained rice and cook for an additional 10 to 12 minutes. Drain, then set apart.

4. Heat the vegetable oil over medium heat in a big, deep pan. Onions should be cooked until golden brown after being added.

5. Add the ginger and garlic paste and stir continuously for 1 to 2 minutes.

6. Include the salt, cumin seeds, coriander powder, green chilies, tomatoes, and garam masala. Till the tomatoes are soft and the mixture has thickened, cook for 5 to 6 minutes.

7. Include the chicken pieces that have been marinated, and cook for 10 to 12 minutes, or until the chicken is fully cooked.

8. Set the oven to 180 °C (350 °F).

9. Arrange the partially cooked rice and chicken mixture in layers in a sizable baking dish, with the rice on the bottom of each layer. Continue until all of the chicken and rice mixture has been consumed.

10. Bake the dish with the foil on top for 20 to 25 minutes, or until the rice is done.

11. Add fried onions and fresh coriander leaves as garnish. Serve hot.
