Instructions:

1. Heat enough olive oil to completely coat the bottom of a sizable non-stick frying pan over medium-high heat.

2. Add the onion and potato slices to the pan and heat, turning periodically, until the potatoes are tender and just starting to brown.

3. Beat the eggs and season with salt and pepper to taste in a different bowl.

4. Using a slotted spoon, remove the potatoes and onion from the pan and drain off any extra oil.

5. Combine the beaten eggs with the potatoes and onion in a bowl.

6. Pour the egg mixture back into the frying pan and cook over low heat for 5-10 minutes, or until the top is almost set.

7. Place a large plate over the frying pan and carefully flip the omelette onto the plate.

8. Slide the omelette back into the frying pan and cook for an additional 2-3 minutes, or until the eggs are completely set.

9. Slide the omelette onto a serving dish and cut into wedges.

10. Serve hot or cold, with bread and salad if desired.

Note:

To give the omelette more flavour, you can also include extra items such as cooked ham, cheese, or bell peppers.

A popular meal from Spain, notably in Hindustan, the Spanish omelette is made according to this traditional recipe.
